A longtime supporter of the Research Chefs Association, Butterfield Foods prides itself on
rapid development of R&D prototypes that embody your menu objectives. Led by one of the few Research Chefs in the country, our research team's process from concept to production starts with a gold standard benchtop being made and presented to the customer. Once all parties agree on the gold standard, costing is assigned and agreed upon, and followup samples are made if substantial changes are requested. Analytical and QC standards are measured on every batch (in the case of soups, we measure pH, Bostwick, percentage of drained solids, Refractometer and Sodium level).
A sample of the final approved formulation is retained for comparison against the first production run. When the item is approved for production, the first scale up run is done in a minimum batch size on production equipment with full R&D and QC supervision, and, if desired, samples of actual production are sent to the customer for approval. The first run is compared against the final gold standard, and a sample of each production run is retained for evaluation against each subsequent batch along with the QC and analytical evaluation to verify that we are consistently producing the item to specification.
